Spanish seafood soup

  • 1 celery stalk, coarsely chopped
  • 1 carrot, cut into large pieces
  • 1 onion, peeled and quartered
  • 1 large ripe tomato, quartered
  • 2 tablespoons olive oil
  • 100 ml dry white wine
  • 1 tablespoon plain flour
  • salt & pepper
  • 200g fresh cleaned squid, cut into large bite sized pieces
  • 400g black mussels, scrubbed and beard removed
  • 500g firm white fish fillets , cut into large pieces
  • 300g peeled raw medium green prawns, tails left on
  • 1/2 cup finely chopped parsley, for garnish

Step 1

Insert Multiblade and add the celery, carrot, onion and tomato.

Step 2

Press PULSE for 3 seconds. Scrape down sides and repeat until finely chopped.

Step 3

Insert StirAssist, and add oil, select BOIL P3 and manually change STIR SPEED to 1. Press START twice to begin STEP 1.

Step 4

At the beep add the wine, flour, salt and pepper and then press START to begin STEP 2.

Step 5

At the beep add squid, mussels, fish and prawns then press START to finish cooking.

Step 6

Serve sprinkled with chopped parsley.
