Red Wine Braised Lamb Shanks and Vegetables

  • 1 large carrot, coarsely chopped
  • 2 stalks green celery, coarsely chopped
  • 2 onion, peeled and quartered
  • 2 clove garlic, peeled
  • 4 small lamb shanks, end trimmed(ask your butcher to do this)
  • 1 tablespoon plain flour
  • 2 tablespoons tomato paste
  • 100ml red wine
  • 1 cup (250ml) chicken stock
  • 2 bay leaves
  • 2 sprigs fresh thyme
  • salt & pepper

Step 1

Insert Mini bowl and Mini Multiblade and add the carrot, celery, onion and garlic.

Step 2

Press PULSE for 5 seconds; scrape down sides and repeat until coarsely chopped. Remove Mini bowl and set aside.

Step 3

Toss the shanks in the flour to dust lightly. Add the oil and Select 140 C /10 minutes and press START. After 2 minutes, add the shanks, sear and brown lightly on all sides, pausing the cooking and turning over as needed. Remove the shanks and set aside.

Step 4

Insert StirAssist and select 100C / 5 minutes/ STIR SPEED 1 and press START. Add tomato paste and cook for 1 minute. PAUSE cooking and add wine . Press START to continue cooking.

Step 5

At the end of cooking time, add chopped vegetables, lamb shanks, chicken stock, bay leaf, thyme and salt and pepper.

Step 6

Select 100°C / 2 hours and press START.

Step 7

After 60 min open the lid and turn the shanks over. Close the lid and press START again to finish cooking.
