100 g cheddar cheese, roughly chopped
1kg floury potatoes, peeled and diced
1 teaspoon sea salt
50 g butter
3 egg yolks
¼ teaspoon ground nutmeg
Insert the Mini Bowl with the Mini MultiBlade and add cheese. Press. PULSE for 8 seconds, until very finely chopped. Remove and set aside.
Insert the Dough Blade, add the potatoes, cold water and salt. Select BOIL P1 and press START to begin cooking.
Once cooked, remove the potatoes and drain off any leftover water.
Replace the Dough Blade with the Multiblade, and return the cooked potatoes to the bowl. Add the butter, egg yolks, nutmeg and grated cheese.
Select STIR SPEED 4/ 1 minute and press START. Mixture should be smooth and creamy.
Line a baking tray with baking paper. Pipe rounds of the mixture onto the sheet. Bake at 200°C/180C (fan forced) for 20 minutes, or until crisp and golden.
